We had a fun and impromptu Instagram contest yesterday after a little “cheese” making session and thought it was worthy of a share! So yes, you smarties that guessed cashew cheese wheel (or something of the sort) nailed it!
What do we love more than cheese? Well a tasty & healthy cheese “replacement.” You bet we do. What about this statement – cheese and healthy digestion in the same sentence? Once again, you bet.
Currently we are in “fermentation mode” (seen below) but all signs point to a true success in the kitchen. Try this bad boy, you won’t be sorry!
HERB CASHEW CHEESE
This one requires cheesecloth or a nut milk bag and some probiotics, but oh so worth it if you have them!
1/2 teaspoon probiotic powder, or two capsules opened and emptied
1 cup room temperature/slightly warm water
2 cups raw cashews
1 teaspoon sea salt
1 tablespoon nutritional yeast
1 clove garlic, minced
1 teaspoon garlic powder
1 green onion, green part only, sliced thin
2 tablespoons diced chives
1 – 2 tablespoon(s) dried herbs de provence or thyme/rosemary (whichever is your favorite and amount dependent on how ‘herby’ you want it)
- Mix probiotic powder with water and stir until dissolved completely. Add water/probiotic mixture and cashews to food processor or high speed blender. Blend until smooth.
- Spoon mixture into a nut bag or container lined with cheesecloth, squeeze excess water out and discard. Leave nut bag or cheesecloth in strainer (at room temperature) to ferment for up to 8-12 hours – perfect to do overnight.
- Spoon cheese from nut bag or cheesecloth into a medium bowl. Add remaining ingredients and using wooden spoon or rubber spatula stir well together. Place in mini springform pan*, firmly pressing cheese down and leave in fridge for at least 6-8 hours. Turn upside down, release from pan and sprinkle with dried herbs. *If you don’t have a mini springform, line a small 6” baking dish or anything that will work well for a small mold with parchment paper so you can easily remove.
- Garnish with sprinkling of herbs or sprig of thyme or rosemary.
Now go on, get cheesy.
